Homemade Peanut Butter Cups

Before we jump in to my favorite treat recipe, let's quick chat about the health benefits of coconut oil (one of the main ingredients in making your Peanut Butter Cups)!  

At first glance, you might think that you should avoid Coconut Oil due to the high Saturated Fat content.  HOWEVER, the saturated fats in this oil are called MTC's (which is short for Medium Chain Triglycerides).  Without overwhelming you with too much information, let me just say that most of the saturated fats in our processed foods are long-chain triglycerides and they are not digested in the way that our MTC's are! Not only do the fatty acids (MTC's) we get from Coconut Oil provide a quick source of energy for our bodies, but it is also proven to burn more fat and therefor aid in weight loss (gotta love that!).  Coconut oil is also shown to lower your risk of heart disease!!  I truly could go on and on about the benefits here (don't even get me started with talking about coconut oil for your skin and hair), but the bottom line is, if coconut oil is not already in your pantry, I suggest you go buy some TODAY!!

Okay...so now that we're all up to speed on why coconut oil rocks the world, I should probably mention that these should be eaten in moderation ;)  These Peanut Butter Cups are the BOMB.com, and you'll likely want to eat them all in one sitting.  Keep in mind that these are made to be a healthy alternative to junk food when you're craving a sweet treat, so don't outweigh the health benefits here by overindulging!  
    
Homemade Peanut Butter Cups

Ingredients: 

3-4 TBS Coconut Oil
1/2 Scoop of Shakeology (Chocoloate or Vegan Chocolate is my favorite with this recipe)
4-5 TBS Peanut Butter
1/4 Banana, sliced thin (optional)
4-5 Muffin Tins



Directions:

Melt your coconut oil in the microwave for 20-30 seconds until completely melted.


Pour your Shakeology into a small bowl.  Stir in your melted coconut oil until completely mixed (there should be no chunks, and the consistency should be thick, but smooth)

Evenly pour mixture into your muffin tins and stick them in the freezer until completely frozen (about 30 minutes).  If you want to add in banana (or any other fruit), you will want to add this in before freezing.

               

Remove from freezer and layer each with 1 Tbs peanut butter, then return to the freezer for another 30 minutes, or until frozen.

Your Homemade Peanut Butter Cups are now ready to eat! Remove the muffin wrapper and you can eat them frozen if you'd like or let them sit on the counter for a 30-60 minutes to slightly thaw, then enjoy!
